T1O, which opened in November of 2011, is currently the only Thai food truck in San Diego. Dishes like spicy grilled beef salad, tom yum goong, drunken noodles, short pork ribs, pad Thai, Pad See Ew, and panang, pumpkin, and eggplant green curries grace their SPICY menu. They were kind enough to answer some questions for SDFT in this interview exclusive!

What did you do before you had the food truck? Tell us a little about yourself.
This is a family-run business. The family has so much talent–some have worked in Thai restaurants that the family has owned over the years, and others bring experience from the business world while others have a great creative spirit that knows no limits.

In one sentence, how would you describe your food? A fresh, casual twist on Traditional Thai Food.

What’s your favorite thing about running the business and what is your biggest challenge?
No Limits – We have the freedom to be creative and really listen to our customers! This opportunity allows the family to challenge itself by creating new dishes and creative ways to deliver great service. Our biggest challenge is twofold: Keeping the truck running – Our rolling kitchen sometimes just does not want to cooperate and seems to want to do it at the darndest times! Secondly, too many events on the same day makes us have to choose when really we want to be in both places at the same time. Decisions Decisions!

Chicken Satay

How do you come up with menu items?
With the help of our Master Chef Mike, we looked for dishes we would want to eat that were simple and would be inviting for those who have not yet tried Thai food.

What would you say is your most popular item?
Our most popular dish is Chicken Satay, chicken on served on a stick. It’s chicken breast marinated for 48 hours in coconut milk, cilantro and a few secret spices, then grilled and served with warm peanut sauce. How can you go wrong with stick food?
